Chicken and Modì® apple salad with low-fat yogurt mayonnaise salad
     
Ingredients for 4 people
whole chicken breast: 800g / 28.21 ounces
1 slice of lime
pepper in grains (pink, green, white, black)
1 bay leaf
salt
celery, chopped: 120g / 4.23 ounces
2 Modì® apples cored and diced
green salad, to serve with

for the low-fat mayonnaise
6 tablespoons of mayonnaise
6 tablespoons of natural low-fat yogurt
salt and black pepper
powdered curry, to taste
     
Preparation
Prepare the chicken: put the chicken breast into a saucepan with the slice of lime, a few grains of pepper, the bay leaf, a pinch of salt and cold water. Boil it, cover it and cook on a low fire until well done. Let it cool in its water, drain it, dry it with kitchen paper and dice it.

Make the mayonnaise: mix all the ingredients and add salt and pepper to taste.

Serve: mix the chicken with the celery and the apple. Dress it with the yogurt mayonnaise. Place in the fridge for a few hours. Serve the chicken salad on green salad leaves (for example, valerian).

Ingredients for: 4 people
Light and appetizing: this salad needs to be prepared a few hours earlier to refrigerate and allow the various flavours to slowly blend.
The classic mayonnaise dressing is made lighter with a few tablespoonfulls of low-fat yogurt and spiced with a pinch of curry. Crispy pieces of diced celery and apple create a pleasing contrast to the soft chicken pieces.
