Modì apple, prawn and fennel salad with citrus fruits
Ingredients for 4 servings
small fennels | 2
Modì apples | 2
peeled cooked prawns | 200g (7oz.)
juice of half an orange
juice of half a lime
juice of half a small lemon
extra-virgin olive oil, salt and pepper

Preparation
Wash, core and dice the Modì apples.
Clean the fennel and slice it very thinly using a mandoline.
In a jar or small bowl, mix the citrus fruits juice, add oil according to taste (5-6 tablespoons suggested), salt and pepper.
Mix the fennel and the apples and decorate with the prawns.
Before serving, flavour the salad with the citrus dressing (or serve it aside).
